Meet the team
The Manabu team is led by Alastair Long, a British chef with a passion for Japanese kaiseki and exceptional ingredients from the British Isles and Europe. After an international career, he founded Manabu to combine the discipline of kaiseki with the excellence of local terroirs. Working alongside him, Junwoong Moon, a chef of Korean origin, brings his unique perspective and creativity, having worked with Alastair since 2018. Together, they form a team dedicated to continuous learning and the pursuit of the finest ingredients, creating refined cuisine that honors the seasons.

Alastair Long
Originally from Scotland, Alastair grew up in Manchester and discovered his passion for Japanese cuisine at the age of 18. He trained with Gordon Ramsay in London at his Michelin-starred Japanese restaurant. His international career then led him to Zuma, a global reference for contemporary Japanese cuisine, where he served as executive chef. - Second Manabu
Junwoong Moon
A Korean-born chef, Junwoong Moon has worked alongside Alastair Long since 2018. He joined the Manabu project after completing a six-month internship at Glion, where Alastair taught Modern Japanese Gastronomy.
