A Korean-born chef, Junwoong Moon has worked alongside Alastair Long since 2018. He joined the Manabu project after completing a six-month internship at Glion, where Alastair taught Modern Japanese Gastronomy. Junwoong Moon works alongside Alastair in Manabu’s kitchen. The two first met in 2018, when Moon was a student at Glion Institute of Higher Education, where Alastair taught Modern Japanese Gastronomy.

Recognizing his talent and dedication from the start, Alastair invited Moon to join him for the opening of an omakase-style sushi bar on the Glion campus, where Moon completed a six-month internship.

Since then, Moon has worked closely with Alastair on the development of Manabu, contributing to its early pop-ups and residencies before the restaurant found its permanent home at the Hôtel des Trois Couronnes in Vevey.

Of Korean descent, Moon brings an additional cultural perspective to the kitchen, which can sometimes influence the team’s approach and decision-making, while remaining true to Manabu’s philosophy.

Having been part of the project since its early stages, Moon continues to work alongside Alastair as the restaurant evolves.
